Made from an old recipe that was rediscovered by the Danish Cheese Institute in 1951, this cheese is mild and buttery when young. As it ages, it develops a fuller, more robust flavour. The interior, which is scattered with small, irregular shaped holes, is supple, elastic and generally quite sweet, although it can be pungent.
